Thyme is a plant with an ancient history of  use. It is commonly used in the Mediterranean region where it grows in the wild. Thyme is an exceptional plant which is known for its medicinal benefits and enticing flavour. In the past, it was used by the  Egyptians and Etruscan civilization for the mummification process.  People have continued to use it over time due to its antiseptic properties and ability to help with digestion. The word "Thymus" in  Greek also means “to flavour”. 

The small rounded thyme leaves contain  essential oil. When heated, this oil releases the typical flavours that  we associate with thyme. In fact, unlike most herbs, which are  preferably used without cooking, thyme needs to be heated in order to release its flavour.

Thyme is a key ingredient when preparing a bouquet  garni: it is then combined with bay leaf and parsley stems to flavour stocks and stews. Use it in cooking to flavour marinades, stews, ragouts, ratatouille and fish soups, or as a seasoning for grilled meats. It can also be used to make herbal tea. Just brew it for five minutes in hot water and use one teaspoon per cup.
