This superbly textured quince jam has instantly become a staff favourite... It is made nearby Nice from a medley of wild and cultivated quince. It has the typical fruity aromas of quince. Quince is carefully picked when fully but not overly ripe, and is first sliced and blanched, then candied and finally cooked by hand by Menes's master jam makers using a copper cauldron pot. The large quince pieces add an especially wondefrul touch and give the jam an exquisite texture. 

Apart from its versatile use for breakfast and tea, quince jam goes excellent with fresh goats or sheep milk cheese.
